i have this option disabled and can paste supergrid ships from the workshop... Makes me wonder what this option is for.
That is probably the case with the ships in the workshop that you've seen. I know what I have to do to modify the blueprint properly, but in game it won’t let me place it

Iirc supergridding is how you make invincible ships so it would be very gamebreaking in PvP.
I want to learn how to make a supergrid for cosmetic reasons and not to exploit the game to make invincible ships, like someone had pointed out in another post i made about the "Enable Supergridding" option when creating a New World.
From what I hear, it makes the ship very hard to damage.

Supergridding is an exploit in which you place a large-grid block, blueprint it, then edit the xml for the blueprint itself to tell the game it's actually a small block.

I think they wanted to delete this but decided to add it as option.
Now server admins can block this supergridding thing if they don't want players to use.

The problem is that two large-blocks are now held together at 25 points of contact instead of one. Hey Engineers! Nice! I play solo and I love the building aspect of the game.
All I know is that supergridding "exploit" allows large and small blocks to be used in the same grid.
This way some can make small car blocks with large flight seat but must mess in the Blueprint file to do supergridding. Space Engineers. I believe that option is only for dissabling the pasting or building of supergrid ships.
You can then paste those blocks onto a small grid. Dies this have anything to do with this ? Allows super gridding, an Exploit that allows you to put large gloves on small blocks
